- Place 1 filter bag in a 1 gallon (4 liter) pitcher.
- Fill with 2 Quarts (2 liters) boiling water.
- Steep for 3 minutes and remove bag.
- Fill pitcher to top with cold water; serve over ice.
Black tea is the fully oxidized leaf of Camellia sinensis and requires the most processing. The brewed liquor ranges between dark brown and deep red. Black teas offer the strongest flavors and, in some cases, the greatest astringency.
If ice is your preference, consider the Persians. By 400 B.C., they had devised a way to store ice in the middle of summer in the desert using primitive underground refrigerators called yakhchals, or "ice pits."
