Recipe for great coffee

  1. Use cold, filtered water and a clean machine.
  2. Grind beans just before brewing:
    • Course for coffee press
    • Medium for automatic drip
  3. Measure 2 tbsp (10 g) ground coffee for every 6 fl oz (180 ml) water.

To help preserve that fresh flavor, keep this bag sealed tight in a cabinet (not in the refrigerator) and brew within a week of opening.

Each coffee requires slightly different amounts of time and temperature during the roasting process to create a cup at its peak of aroma, acidity, body and flavor. We classify our coffees in three roast profiles so you can easily find your desired flavor and intensity.

  • Blonde: Blonde-roasted coffees have a shorter roast time, lighter body and mellow flavors.
  • Medium: Medium-roasted coffees are balanced with smooth and rich flavors.
  • Dark: Dark-roasted coffees feature a fuller body and robust, bold flavors.

This coffee debuted as a Thailand exclusive in 2003. Muan Jai means “wholehearted happiness” in Kum-Mueang, a language of northern Thailand. The Thai component of this coffee is produced by coffee farmers from the hill tribes of Northern Thailand and representatives from the hill tribes attended the launch event of this coffee in Thailand.

One of the finer Starbucks blends Muan Jai is a great combination of body, aroma, and taste. Not too bitter but retains that "Starbucks edge", while bringing a very balanced, mature taste to the finish. I find it the best of the Asian blends, including the Reserves. I hope that they continue to import it to the States. I used to buy it in Thailand and have friends ship it until I discovered it at Starbucks on line. My favorite coffee by a long shot. Move over Sumatra! I know, everybody loves Sumatra and I am probably committing blasphemy by saying that I have grown a little tired of it. It was suggested that I take the next step and try Komodo Dragon; my impressions are that it tastes like I am licking a cedar tree after a forest fire. Some may desire that taste; I don't care for it personally. I pressed onward, searching for a new "bold" favorite. I ordered a couple bags of Muan Jai on my last purchase and I do not regret it. It really is a treat for the senses! Upon opening the bag, there is a deep spice note, yet it isn't cedar-y like Komodo Dragon. My preferred method of brewing is the pour over, as I feel it creates a much cleaner tasting cup of coffee than with a press. Water boiling in the electric kettle, coffee ground and placed in the pourover system sitting neatly on top of my favorite ceramic mug, and I am ready to go. As I bloom the grounds, the scent of stonefruits, like plums and cherries, comes alive. A few minutes later, after brewing is finished, I take my first sip. Spicy, complex, full bodied, and smooth; not even a hint of smoke, as is common with other Asian coffees due to their preferred roasting profile. This coffee would go amazing with a slice of coffee cake, warm cobbler, or now that I think about it.... bread pudding! Yum... It definitely lives up to its name, meaning "wholehearted happiness." I think this will be what I serve with dessert at Thanksgiving this year. I wish this was brewed and sold in stores in the United States. October 11, 2013
