Recipe for great coffee

  1. Use cold, filtered water and a clean machine.
  2. Grind beans just before brewing:
    • Course for coffee press
    • Medium for automatic drip
  3. Measure 2 tbsp (10 g) ground coffee for every 6 fl oz (180 ml) water.

To help preserve that fresh flavor, keep this bag sealed tight in a cabinet (not in the refrigerator) and brew within a week of opening.

Each coffee requires slightly different amounts of time and temperature during the roasting process to create a cup at its peak of aroma, acidity, body and flavor. We classify our coffees in three roast profiles so you can easily find your desired flavor and intensity.

  • Blonde: Blonde-roasted coffees have a shorter roast time, lighter body and mellow flavors.
  • Medium: Medium-roasted coffees are balanced with smooth and rich flavors.
  • Dark: Dark-roasted coffees feature a fuller body and robust, bold flavors.

This coffee debuted as a Thailand exclusive in 2003. Muan Jai means “wholehearted happiness” in Kum-Mueang, a language of northern Thailand. The Thai component of this coffee is produced by coffee farmers from the hill tribes of Northern Thailand and representatives from the hill tribes attended the launch event of this coffee in Thailand.

Muan Jai Blend This is one of my top 5 Coffees of all time. This special blend of Thai, New Guinea Pea Berry and Sumatra is delicious! I have access to a Clover Brewer and this Coffee takes on another life as its true complexity is revealed during the Clover Process. Disappointed - more blonde than bold I was surprised at how bland this coffee seemed; I've made several pots of varying strengths and it just doesn't live up to its description. It reminds me of the Starbucks Blonde coffees which seem "empty" to me. I like bold and strong, and like most of Starbucks offerings in that category. However, this blend seems to be missing some notes...nothing unpleasant, but it is watery tasting even when brewed stronger than normal. For comparison, I brew Anniversary Blend, Komodo Dragon, and Cielo in the same coffee maker and they taste great. February 28, 2013
